Ingredients

  • Frozen mixed vegetables (peas, carrots, beans, corn)3 cups
  • Potatoes, boiled and mashed2 medium
  • Onions, finely chopped1 medium
  • Tomatoes, pureed1.5 cups
  • Ginger-garlic paste1 tbsp
  • Pav Bhaji Masala2.5 tbsp
  • Red chili powder1/2 tsp
  • Butter3 tbsp
  • Oil1 tbsp
  • Saltto taste
  • Wateras needed
  • Pav (bread rolls)8
  • Lemon wedges (for serving)4

Steps

    Heat oil and 1 tbsp butter in a pan. Add chopped onions and sauté until translucent.

    Add ginger-garlic paste and sauté for 30 seconds.

    Add pureed tomatoes and red chili powder. Cook for 5 minutes.

    Add frozen mixed vegetables and cook until tender (about 8-10 minutes).

    Add mashed potatoes, Pav Bhaji masala, and salt. Mix well. Add water to reach desired consistency.
