Ingredients
- Frozen mixed vegetables (peas, carrots, beans, corn)3 cups
- Potatoes, boiled and mashed2 medium
- Onions, finely chopped1 medium
- Tomatoes, pureed1.5 cups
- Ginger-garlic paste1 tbsp
- Pav Bhaji Masala2.5 tbsp
- Red chili powder1/2 tsp
- Butter3 tbsp
- Oil1 tbsp
- Saltto taste
- Wateras needed
- Pav (bread rolls)8
- Lemon wedges (for serving)4
Steps

Heat oil and 1 tbsp butter in a pan. Add chopped onions and sauté until translucent.

Add ginger-garlic paste and sauté for 30 seconds.

Add pureed tomatoes and red chili powder. Cook for 5 minutes.

Add frozen mixed vegetables and cook until tender (about 8-10 minutes).

Add mashed potatoes, Pav Bhaji masala, and salt. Mix well. Add water to reach desired consistency.

Simmer for 5 minutes for flavors to combine.

Toast pav with butter on a griddle.
