Ingredients

  • Frozen chopped spinach, thawed and squeezed dry10 oz
  • Feta cheese, crumbled8 oz
  • Ricotta cheese1/4 cup
  • Green onions, chopped2
  • Egg1 large
  • Lemon zest1 tsp
  • Phyllo dough sheets6
  • Butter, melted4 tbsp
  • Salt1/4 tsp
  • Black pepper1/8 tsp

Steps

    Preheat oven to 375°F (190°C).

    In a bowl, combine the squeezed spinach, feta, ricotta, green onions, egg, lemon zest, salt, and pepper. Mix well.

    Lay out one sheet of phyllo dough. Brush with melted butter. Layer another sheet on top and brush with butter. Repeat for a total of 3 layers.

    Cut the layered phyllo into small squares (about 2x2 inches).

    Place a small spoonful of the spinach mixture in the center of each square. Fold the phyllo to create small triangles or parcels.

    Place the bites on a baking sheet lined with parchment paper. Brush the tops with melted butter.

    Bake for 15-20 minutes, or until golden brown and crisp.
