- Water or chicken broth3 cups
- Lemon zest1 tsp
- Fresh parsley, chopped1/4 cup
- Cucumber, diced1/2
- Tomatoes, diced1 cup
- Red onion, thinly sliced1/4

Marinate chicken as per Classic Greek Chicken Souvlaki recipe (Steps 1-3). Grill or pan-sear chicken until cooked through. Cut into bite-sized pieces.

Cook rice according to package directions using water or broth. Once cooked, stir in lemon zest, chopped parsley, salt, and pepper.

Assemble bowls: spoon lemon-herb rice into the bottom of each bowl.

Top the rice with the cooked chicken pieces.

Arrange diced cucumber, tomatoes, and red onion around the chicken.
