Ingredients
- Tomatoes4 large
- Green Peppers (Sivri Biber or similar)2 medium
- Onion1 medium
- Eggs6 large
- Olive Oil4 tablespoons
- Salt1 teaspoon
- Black Pepper1/2 teaspoon
- Butter (optional)1 tablespoon
- Parsley (for garnish)2 tablespoons, chopped

Finely chop the onion and green peppers. Dice the tomatoes.

Heat olive oil (and butter, if using) in a large skillet over medium heat. Add the chopped onion and sauté until softened and translucent, about 5-7 minutes.

Add the chopped green peppers to the skillet and cook for another 5 minutes until they begin to soften.

Stir in the diced tomatoes, salt, and black pepper. Cook, stirring occasionally, until the tomatoes break down and form a sauce, about 8-10 minutes.

Make wells in the tomato mixture and crack the eggs directly into them. Alternatively, whisk the eggs in a bowl and pour them over the mixture.

Cook uncovered until the eggs are set to your desired doneness, about 3-5 minutes. Gently stir if you prefer a more scrambled consistency.

Garnish with chopped fresh parsley before serving.
