Ingredients
- Tomatoes3 large
- Green Peppers1 medium
- Onion1/2 medium
- Eggs6 large
- Sucuk (Turkish spicy sausage)100g, sliced
- Feta Cheese50g, crumbled
- Olive Oil3 tablespoons
- Salt1/2 teaspoon
- Black Pepper1/4 teaspoon
- Dill (for garnish)1 tablespoon, chopped

Finely chop the onion and green pepper. Dice the tomatoes.

Heat olive oil in a large skillet over medium heat. Add the sliced sucuk and cook until lightly browned and some fat has rendered, about 3-4 minutes. Remove sucuk and set aside, leaving the rendered fat in the pan.

Add the chopped onion and green pepper to the skillet and sauté until softened, about 5 minutes.

Stir in the diced tomatoes, salt, and pepper. Cook until tomatoes break down, about 8 minutes.

Return the cooked sucuk to the skillet. Make wells and crack the eggs into them, or whisk eggs and pour over.

Cook until eggs are set. Sprinkle crumbled feta cheese over the top during the last minute of cooking.

Garnish with chopped fresh dill before serving.
