Ingredients
- Arborio rice250g
- Cooked chicken250g
- Chicken broth1 liter
- Shallots2
- Garlic1 clove
- Lemon zest1 tbsp
- Fresh herbs (parsley, chives)2 tbsp chopped
- Parmesan cheese40g
- Butter30g
- Olive oil1 tbsp
- Saltto taste
- Black pepperto taste

Finely chop the shallots and mince the garlic.

Heat olive oil and 15g of butter in a pan over medium heat. Sauté shallots until softened, about 3 minutes.

Add minced garlic and cook for 30 seconds.

Add Arborio rice and toast for 1 minute.

Add warm chicken broth, one ladleful at a time, stirring frequently. Cook for about 15-18 minutes until rice is creamy and al dente.

Stir in the cooked chicken, remaining butter, Parmesan cheese, lemon zest, and fresh herbs. Season with salt and pepper.
