Ingredients
- Green lentils1 cup
- Carrots2 medium
- Celery stalks2
- Leek1 large
- Garlic3 cloves
- Vegetable broth6 cups
- Olive oil2 tablespoons
- Thyme sprigs3
- Bay leaf1

Rinse the green lentils thoroughly.

Dice the carrots, celery, and leek. Mince the garlic.

Heat olive oil in a large pot or Dutch oven over medium heat. Add diced carrots, celery, and leek. Sauté until softened, about 8-10 minutes.

Add minced garlic and cook for 1 minute more until fragrant.

Stir in the rinsed lentils, vegetable broth, thyme sprigs, and bay leaf.

Bring the soup to a boil, then reduce heat, cover, and simmer for 40-50 minutes, or until lentils are tender.

Remove thyme sprigs and bay leaf. Season with salt and black pepper to taste.
