Ingredients

  • Brown or green lentils1 cup
  • Italian sausage (mild or hot)1/2 lb
  • Onion1 medium
  • Garlic3 cloves
  • Diced tomatoes1 (14.5 oz) can
  • Chicken or vegetable broth6 cups
  • Spinach2 cups, fresh
  • Smoked paprika1 teaspoon
  • Cumin1/2 teaspoon
  • Olive oil1 tablespoon

    Rinse the lentils thoroughly.

    Chop the onion and mince the garlic.

    In a large pot, brown the Italian sausage over medium-high heat, breaking it up with a spoon. Drain off excess fat.
