Ingredients
- Brown or green lentils1 cup
- Italian sausage (mild or hot)1/2 lb
- Onion1 medium
- Garlic3 cloves
- Diced tomatoes1 (14.5 oz) can
- Chicken or vegetable broth6 cups
- Spinach2 cups, fresh
- Smoked paprika1 teaspoon
- Cumin1/2 teaspoon
- Olive oil1 tablespoon

Rinse the lentils thoroughly.

Chop the onion and mince the garlic.

In a large pot, brown the Italian sausage over medium-high heat, breaking it up with a spoon. Drain off excess fat.

Add olive oil to the pot with the sausage. Add chopped onion and cook until softened, about 5 minutes.

Add minced garlic, smoked paprika, and cumin. Cook for 1 minute until fragrant.

Stir in the rinsed lentils, diced tomatoes (undrained), and broth.
