Ingredients
- Potatoes (Yukon Gold or similar waxy type)1kg
- Olive oil4 tbsp
- Garlic cloves4-5
- Mixed dried herbs (rosemary, thyme, oregano)1 tbsp
- Saltto taste
- Black pepperto taste

Preheat your oven to 200°C (180°C fan/Gas Mark 6).

Peel the potatoes and cut them into 1.5-inch chunks.

Place the potato chunks in a large pan of cold, salted water. Bring to the boil and simmer for 8 minutes until the edges are just starting to soften.

Drain the potatoes thoroughly in a colander and shake to rough up the edges.

In a large bowl, toss the drained potatoes with olive oil, whole unpeeled garlic cloves, and mixed dried herbs. Season with salt and pepper.

Spread the potatoes in a single layer on a baking sheet.

Roast for 40-50 minutes, turning halfway through, until golden brown and tender.
