Ingredients

- Herbs de Provence1 tsp
- Fresh Thyme2 tbsp, chopped

For the piperade base: Roast red and yellow bell peppers until skin is charred, then peel, seed, and finely chop. Sauté finely chopped onion and minced garlic in 2 tbsp olive oil until soft. Add chopped roasted peppers, 1 chopped tomato, herbs de Provence, salt, and pepper. Simmer for 15 minutes. Blend until smooth.

Thinly slice eggplant, zucchini, yellow squash, and the remaining 1 tomato (about 1/8 inch thick). A mandoline is recommended.

Spread the piperade evenly over the bottom of a round baking dish (approx. 9-inch).

Arrange the vegetable slices in a decorative pattern (spiral or concentric circles) over the piperade, alternating colors. Overlap slices slightly.

Drizzle with remaining 2 tbsp olive oil, sprinkle with chopped fresh thyme, salt, and pepper.

Cover the dish tightly with foil.

Bake in a preheated oven at 375°F (190°C) for 45-60 minutes, until vegetables are tender.
