- Rotisserie chicken, shredded3 cups
- Cannellini beans2 cans (15 oz each), rinsed and drained
- Diced green chilies1 can (4 oz)
- Chicken broth4 cups
- Onion, chopped1/2 medium
- Garlic powder1 tsp
- Cumin1 tsp
- Saltto taste
- Black pepperto taste
- Olive oil1 tbsp
- Monterey Jack cheese (for garnish)1/4 cup
- Jalapeño, sliced (for garnish)optional

Heat olive oil in a pot over medium heat. Add chopped onion and cook until softened, about 3-4 minutes.
