
Classic Chicken Quesadillas

Ingredients
- Boneless, skinless chicken breasts1 lb
- Chicken broth1 cup
- Cumin1 tsp
- Chili powder1 tsp
- Garlic powder1/2 tsp
- Saltto taste
- Black pepperto taste
- Large flour tortillas8
- Shredded Monterey Jack cheese2 cups
- Shredded cheddar cheese1 cup
- Butter or vegetable oil2 tbsp
Steps

Boil chicken breasts in chicken broth until cooked through, about 15-20 minutes. Remove chicken and shred.

In a bowl, mix shredded chicken with cumin, chili powder, garlic powder, salt, and pepper.

Lay out four tortillas. Sprinkle half of the cheese over one half of each tortilla.

Spoon the seasoned chicken mixture over the cheese.

Top the chicken with the remaining cheese.

Fold the other half of the tortilla over the filling.

Heat butter or oil in a large skillet over medium heat.

Cook quesadillas for 3-5 minutes per side, until golden brown and cheese is melted. Repeat with remaining quesadillas.
