Ingredients
- Italian sausage, mild or hot1 lb
- Yellow onion, chopped1 medium
- Garlic, minced4 cloves
- Crushed tomatoes28 oz can
- Beef broth or chicken broth4 cups
- Water2 cups
- Dried oregano1 tsp
- Dried basil1 tsp
- Saltto taste
- Black pepperto taste
- Lasagna noodles, broken into pieces8 oz
- Ricotta cheese1/2 cup
- Parmesan cheese, grated1/4 cup
- Fresh basil leaves, for garnishoptional

In a large pot or Dutch oven, brown the Italian sausage over medium-high heat. Drain off excess fat.

Add the chopped onion and cook until softened, about 5 minutes.

Stir in the minced garlic and cook for 1 minute more until fragrant.

Pour in the crushed tomatoes, beef broth, and water. Add oregano and basil. Season with salt and pepper.

Bring the soup to a boil, then reduce heat and simmer for at least 15 minutes to allow flavors to meld.

Add the broken lasagna noodles to the simmering soup and cook according to package directions, usually 8-10 minutes, until al dente.

Stir in the ricotta cheese and Parmesan cheese until mostly combined. Taste and adjust seasoning if needed.
