Ingredients
- Chicken thighs1.5 lbs
- Soy sauce1/2 cup
- Mirin1/4 cup
- Sake1/4 cup
- Granulated sugar1/4 cup
- Ginger1 tsp, grated
- Garlic1 clove, minced
- Vegetable oil1 tbsp
- Toasted sesame seeds1 tsp
- Scallions2, thinly sliced

In a small saucepan, combine soy sauce, mirin, sake, sugar, grated ginger, and minced garlic. Bring to a simmer over medium heat, stirring until sugar dissolves. Let it simmer for 5-7 minutes until slightly thickened. Set aside.

Cut chicken thighs into bite-sized pieces. Season lightly with salt and pepper.

Heat vegetable oil in a large skillet or wok over medium-high heat.

Add chicken pieces to the hot skillet and cook until browned on all sides and cooked through, about 5-7 minutes.

Pour the prepared teriyaki sauce over the chicken. Stir to coat evenly and let it simmer for another 2-3 minutes until the sauce thickens and glazes the chicken.
