
Classic Beef Stroganoff

Ingredients
- Beef sirloin or tenderloin1.5 lbs
- Butter4 tbsp
- Yellow onion1 large
- Mushrooms (cremini or white)1 lb
- All-purpose flour2 tbsp
- Beef broth1 cup
- Dijon mustard1 tbsp
- Worcestershire sauce1 tsp
- Sour cream1.5 cups
- Saltto taste
- Black pepperto taste
- Fresh parsleyfor garnish
- Egg noodles12 oz

Slice beef thinly against the grain. Season with salt and pepper.

Melt 2 tbsp butter in a large skillet over medium-high heat. Brown beef in batches, then remove and set aside.

Add remaining 2 tbsp butter to the skillet. Add chopped onion and cook until softened, about 5 minutes.

Add sliced mushrooms and cook until browned and tender, about 8-10 minutes.

Sprinkle flour over the mushrooms and onions, stirring to coat. Cook for 1 minute.

Gradually whisk in beef broth until smooth. Bring to a simmer, scraping up any browned bits from the bottom of the pan.

Stir in Dijon mustard and Worcestershire sauce. Return the beef to the skillet.

Reduce heat to low. Stir in sour cream until well combined and heated through. Do not boil.

Season with salt and pepper to taste.

Meanwhile, cook egg noodles according to package directions. Drain.

Serve Beef Stroganoff over egg noodles. Garnish with fresh parsley.
