Ingredients
- Ground beef1 lb
- Onion, chopped1 medium
- Garlic, minced2 cloves
- Canned diced tomatoes, undrained1 (15 oz) can
- Canned kidney beans, rinsed and drained1 (15 oz) can
- Canned corn, drained1 (15 oz) can
- Chili powder2 tbsp
- Ground cumin1 tsp
- Beef broth1 cup
- Saltto taste
- Black pepperto taste
- Olive oil1 tbsp

Heat olive oil in a large pot or Dutch oven over medium-high heat. Add ground beef and cook, breaking it up with a spoon, until browned. Drain excess fat.

Add chopped onion and cook until softened, about 5 minutes.

Stir in minced garlic, chili powder, and cumin. Cook for 1 minute until fragrant.

Add diced tomatoes (with juice), kidney beans, corn, and beef broth. Stir to combine.

Bring to a simmer, then reduce heat to low, cover, and cook for at least 30 minutes, stirring occasionally. The longer it simmers, the better the flavors meld.
