Ingredients
- Skirt steak1.5 lbs
- Lime juice1/4 cup
- Olive oil2 tbsp
- Cumin1 tsp
- Chili powder1 tsp
- Garlic powder1 tsp
- Salt1 tsp
- Black pepper1/2 tsp
- Bell peppers (red, green, yellow)3 large
- Yellow onion1 large
- Flour tortillas8-10
- Cilantro1/4 cup, chopped
- Sour cream1/2 cup
- Salsa or Pico de Gallo1 cup

Slice steak against the grain into thin strips. In a bowl, combine lime juice, olive oil, cumin, chili powder, garlic powder, salt, and pepper. Add steak strips and marinate for at least 30 minutes.

Slice bell peppers and onion into thin strips.

Heat a large skillet or grill pan over medium-high heat. Add marinated steak and cook for 2-3 minutes per side until browned. Remove steak from skillet.

Add sliced peppers and onions to the same skillet. Cook, stirring occasionally, until tender-crisp, about 5-7 minutes. Return steak to the skillet and toss to combine.

Warm tortillas according to package directions.

Serve the steak and vegetable mixture immediately with warm tortillas and desired toppings like cilantro, sour cream, and salsa.
