  • Medjool dates2 cups, pitted
  • Pistachios, shelled and roughly chopped1/2 cup
  • Almonds, blanched and roughly chopped1/2 cup
  • Dark chocolate (70% cocoa or higher)200g, chopped
  • Cocoa powder, unsweetened2 tablespoons
  • Vanilla extract1 teaspoon
  • Salt1/4 teaspoon

    Line a baking sheet with parchment paper.

    In a food processor, combine the pitted Medjool dates and process until a paste forms.

    Add the chopped pistachios, almonds, cocoa powder, vanilla extract, and salt to the food processor. Pulse until the nuts are incorporated but still have some texture.

    Melt the dark chocolate gently using a double boiler or microwave.

    Fold the melted chocolate into the date and nut mixture until well combined.

    Spoon the mixture onto the prepared baking sheet, forming small, bite-sized portions. Alternatively, press the mixture into a small, lined pan and cut into squares once set.
