Ingredients
- Cream cheese32 oz
- Granulated sugar1.5 cups
- Eggs4 large
- Sour cream1 cup
- Vanilla extract2 tsp
- Lemon zest1 tsp
- Graham cracker crumbs1.5 cups
- Unsalted butter, melted6 tbsp
- Salt1/4 tsp

Preheat oven to 350°F (175°C).

Mix graham cracker crumbs, melted butter, and 2 tbsp sugar. Press into the bottom of a 9-inch springform pan.

Bake crust for 10 minutes. Let cool.

Beat cream cheese and remaining sugar until smooth.

Beat in eggs one at a time, then stir in sour cream, vanilla extract, and lemon zest.

Pour filling over crust.

Bake for 50-60 minutes, or until the center is almost set.

Turn off oven and let cheesecake cool in the oven with the door ajar for 1 hour.
