Ingredients

- Breakfast sausage1/2 lb
- Potatoes1 cup, diced
- Cheddar cheese, shredded1 cup
- Salsa1/2 cup
- Butter or oil2 tbsp

Cook the breakfast sausage in a skillet over medium heat until browned. Drain excess fat and set aside.

In the same skillet, add diced potatoes and cook until tender and slightly browned, about 8-10 minutes. Season with salt and pepper.

Whisk eggs with salt and pepper. Pour into the skillet with the potatoes and cook, stirring occasionally, until scrambled and cooked through.

Warm the flour tortillas slightly to make them pliable. This can be done in a dry skillet, microwave, or oven.

Assemble the burritos: Lay a tortilla flat, spread a layer of scrambled eggs and potatoes, top with cooked sausage, shredded cheese, and salsa.

Fold in the sides of the tortilla, then tightly roll it up from the bottom to create a burrito.
