- Whole milk1/2 cup

Slice brioche into 1-inch thick slices.

In a bowl, whisk together eggs, heavy cream, 1/2 cup milk, 1/4 cup sugar, vanilla bean paste, and salt.

Soak brioche slices in the mixture for about 1 minute per side.

Melt butter in a large skillet over medium heat. Cook brioche slices for 3-5 minutes per side until golden brown and cooked through.

While French toast cooks, prepare Crème Anglaise: Heat 1.5 cups milk and sugar in a saucepan until simmering. In a separate bowl, whisk egg yolks. Temper yolks by slowly whisking in some hot milk, then return mixture to saucepan. Cook, stirring constantly, until thickened enough to coat the back of a spoon (do not boil). Strain and chill.
