  • Pork sausages6
  • Chorizo sausage, sliced150g
  • Onion1 large
  • Red bell pepper1
  • Green bell pepper1
  • Garlic cloves, minced3
  • Canned chopped tomatoes1 can (400g)
  • Chicken or vegetable stock200 ml
  • Smoked paprika1 tsp
  • Chilli flakes (optional)1/2 tsp
  • Olive oil2 tbsp
  • Fresh parsley, chopped (for garnish)2 tbsp
  • Saltto taste
  • Black pepperto taste

Steps

    Preheat oven to 180°C (350°F).

    Brown the pork sausages in a large ovenproof casserole dish with olive oil over medium-high heat. Remove sausages and set aside.

    Add the sliced chorizo to the dish and cook for 2-3 minutes until it releases its oils.

    Add chopped onion and bell peppers to the dish and cook until softened, about 5-7 minutes.

    Stir in the minced garlic, smoked paprika, and chilli flakes (if using). Cook for 1 minute until fragrant.

    Pour in the chopped tomatoes and stock. Bring to a simmer.

    Return the pork sausages to the dish. Season with salt and pepper.

    Cover the dish and bake for 45-50 minutes, or until the sausages are cooked through and the sauce has thickened.

    Garnish with fresh parsley and serve hot.
