- Spicy Italian pork sausage1 lb
- Yellow onion, finely chopped1/4 cup
- Garlic, minced1 clove
- All-purpose flour1/4 cup
- Whole milk2 cups
- Chicken broth1/2 cup
- Dried oregano1/2 tsp
- Red pepper flakes1/4 tsp (or to taste)
- Salt1/4 tsp
- Black pepper1/4 tsp

Remove casings from Italian sausage and crumble into a large skillet over medium-high heat. Cook until browned. Add chopped onion and cook until softened, about 5 minutes. Stir in minced garlic and cook for 1 minute more until fragrant.

Drain off excess grease, leaving about 2 tablespoons in the skillet. Sprinkle flour, oregano, and red pepper flakes over the sausage mixture. Stir and cook for 1-2 minutes to form a roux.
