Ingredients
- Fresh corn kernels2 cups
- All-purpose flour1 cup
- Milk1/2 cup
- Egg1 large
- Baking powder1 teaspoon
- Salt1/2 teaspoon
- Black pepper1/4 teaspoon
- Vegetable oil for frying3-4 cups

In a large bowl, whisk together flour, baking powder, salt, and pepper.

In a separate bowl, whisk the egg and milk. Pour the wet ingredients into the dry ingredients and mix until just combined. Do not overmix.

Gently fold in the fresh corn kernels.

Heat about 1 inch of vegetable oil in a large skillet or Dutch oven over medium-high heat until shimmering (around 350°F or 175°C).

Carefully drop spoonfuls of batter (about 2 tablespoons each) into the hot oil, being careful not to overcrowd the pan.
