- Sweet onion1 large
- Eggs2 large
- All-purpose flour1/4 cup

- Vegetable oil for frying1/2 cup
- Honey or maple syrup for servingoptional

Peel and grate the sweet potatoes. Finely chop the sweet onion and caramelize it slowly in a separate pan until deeply golden and sweet. Squeeze excess liquid from the grated sweet potatoes.

In a bowl, combine the grated sweet potatoes, caramelized sweet onion, eggs, flour, cinnamon, salt, and pepper. Mix thoroughly.
