A traditional Swiss potato pancake, crispy on the outside and tender on the inside, made with grated potatoes and pan-fried to golden perfection.

Ingredients
- Potatoes1 kg
- Butter4 tbsp
- Salt1 tsp
- Black Pepper1/2 tsp
- Onion (optional)1/2, finely chopped
- Chives (for garnish)2 tbsp, chopped
Steps

Peel and grate the potatoes using a coarse grater.

Squeeze out as much moisture as possible from the grated potatoes using a clean kitchen towel or cheesecloth.

In a bowl, mix the grated potatoes with salt, pepper, and optional chopped onion.

Melt 2 tbsp of butter in a large non-stick skillet over medium-high heat.

Add the potato mixture to the skillet, pressing it down evenly to form a large pancake.

Cook for 10-15 minutes until the bottom is golden brown and crispy.

Carefully flip the rösti using a plate or spatula.

Add the remaining 2 tbsp of butter to the skillet.

Cook the other side for another 10-15 minutes until golden brown and cooked through.

Slide the rösti onto a serving plate, garnish with chives, and serve immediately.
