
Classic Gözleme with Spinach and Feta

Ingredients
- All-purpose flour3 cups
- Warm water1 cup
- Salt1 teaspoon
- Olive oil2 tablespoons
- Fresh spinach10 oz
- Feta cheese6 oz
- Onion1/2 medium

In a large bowl, combine flour and salt. Gradually add warm water and mix until a shaggy dough forms. Knead on a lightly floured surface for 8-10 minutes until smooth and elastic. Cover and let rest for 30 minutes.

While the dough rests, prepare the filling. Finely chop the onion and sauté in olive oil until softened. Add the spinach and cook until wilted. Remove from heat, let cool slightly, then mix with crumbled feta cheese, black pepper, and a pinch of salt.

Divide the dough into 4 equal portions. Roll each portion into a thin, large circle (about 10-12 inches in diameter).

Place about 1/4 of the filling onto one half of each dough circle, leaving a border. Fold the other half of the dough over the filling, pressing the edges firmly to seal.

Heat a lightly oiled griddle or large non-stick pan over medium-high heat. Carefully place the folded Gözleme onto the hot surface.

Cook for 3-5 minutes per side, or until golden brown and puffed, pressing gently with a spatula. Brush with a little olive oil or butter after cooking if desired.
