Ingredients
- Masa harina3 cups
- Warm water2 cups
- Salt1 teaspoon
- Cooked chicharrón (ground pork)1 cup
- Refried beans1 cup
- Queso fresco or Oaxacan cheese, shredded1.5 cups
- Vegetable oil, for cooking1/4 cup

In a large bowl, combine masa harina and salt. Gradually add warm water, mixing until a soft, pliable dough forms. Knead for 5-10 minutes until smooth. Cover and let rest for 15 minutes.

Prepare the filling: In a separate bowl, mix the ground chicharrón, refried beans, and half of the shredded cheese. If using plain chicharrón, season with salt and pepper.

Divide the masa dough into 8 equal portions. Flatten one portion into a disc in your palm. Place about 2-3 tablespoons of filling in the center. Fold the masa dough over the filling, sealing it completely, and shape into a thick, round patty (about 4-5 inches in diameter). Repeat with remaining dough and filling.

Heat vegetable oil in a large skillet or griddle over medium heat. Carefully place the pupusas on the hot surface.

Cook for 5-7 minutes per side, until golden brown and slightly puffed. Add the remaining cheese on top during the last minute of cooking if desired, allowing it to melt.

Serve hot, traditionally with curtido and salsa roja.
