Ingredients
- all-purpose flour3 cups
- turmeric powder1 tablespoon
- salt1 teaspoon
- cold butter, cubed1 cup
- ice water1/2 cup
- salt cod (saltfish), soaked and flaked1 lb
- callaloo, chopped1 bunch
- onion, finely chopped1 medium
- garlic, minced3 cloves
- scotch bonnet pepper, minced1
- thyme, fresh, chopped1 tablespoon
- black pepper1/2 teaspoon
- vegetable oil2 tablespoons
- egg, beaten (for wash)1

Prepare the dough as per the Authentic Jamaican Beef Patties recipe and chill.

For the filling: Sauté onion in vegetable oil until softened. Add garlic and scotch bonnet pepper, cook for 1 minute.

Add the flaked saltfish, chopped callaloo, thyme, and black pepper. Cook until callaloo is wilted and saltfish is heated through, about 5-7 minutes. Adjust seasoning if needed (saltfish is already salty).

Let the filling cool completely.

Preheat oven to 400°F (200°C). Line baking sheets with parchment paper.

Roll out dough discs and fill with the saltfish and callaloo mixture, similar to the beef patties.

Fold, crimp edges, and place on baking sheets. Brush with egg wash.

Bake for 20-25 minutes, or until golden brown.
