- Rice vermicelli noodles250g
- Coconut milk400ml
- Vegetable broth500ml
- Red curry paste3 tbsp
- Lime juice2 tbsp
- Fish sauce1 tbsp
- Sugar1 tsp
- Cilantrosmall bunch
- Red chili1

Peel and devein shrimp.

In a pot, heat coconut milk and vegetable broth. Stir in red curry paste until dissolved.

Bring to a simmer and cook for 5 minutes. Add lime juice, fish sauce, and sugar. Season with salt.

Add shrimp to the simmering broth and cook for 3-4 minutes until pink and cooked through.

Cook rice vermicelli noodles according to package directions. Drain.

Thinly slice red chili. Chop cilantro.
