Ingredients
- Beef sirloin or flank steak, pre-sliced for stir-fry400g
- Cornstarch50g
- Sweet chilli sauce4 tbsp
- Soy sauce2 tbsp
- Garlic powder1 tsp
- Red chilli flakes1 tsp (or to taste)
- Spring onions2, chopped
- Vegetable oil for frying300ml
- Saltto taste
- Black pepperto taste
- Water1 tbsp

Pat the pre-sliced beef dry with paper towels. In a bowl, toss the beef with cornstarch, salt, and pepper until lightly coated.

Heat vegetable oil in a wok or large skillet over medium-high heat. Fry the coated beef in batches until golden and crispy. Remove and drain on paper towels.

Drain off most of the oil, leaving about 1 tbsp. Add the garlic powder and red chilli flakes. Stir for 15 seconds until fragrant.

Add the sweet chilli sauce, soy sauce, and 1 tbsp water to the wok. Stir to combine and bring to a simmer.

Return the crispy beef to the wok. Toss quickly to coat the beef in the sauce. Stir in most of the chopped spring onions.

Serve immediately, garnished with the remaining spring onions.
