Ingredients
- All-purpose flour225g
- Baking powder2 tsp
- Salt1/2 tsp
- Black pepper1/4 tsp
- Cold unsalted butter50g
- Mature cheddar cheese100g
- Milk150ml
- Egg1 (for egg wash)

Preheat oven to 220°C (200°C fan/Gas Mark 7). Lightly grease a baking sheet.

Sift flour, baking powder, salt, and pepper into a large bowl.

Rub in the cold butter until the mixture resembles breadcrumbs.

Stir in most of the grated cheese, reserving some for topping.

Gradually add the milk to form a soft, slightly sticky dough. Do not overmix.

Turn the dough out onto a lightly floured surface and gently pat or roll to about 2cm thickness.

Cut out scones using a 5-6cm cutter. Place on the prepared baking sheet.

Brush the tops with beaten egg and sprinkle with the reserved cheese.

Bake for 12-15 minutes until well-risen and golden brown.
