In a large bowl, combine flour, instant yeast, and brown sugar.

Add warm water and stir with a spoon until just combined and a shaggy dough forms. Do not overmix.

Cover the bowl and let the dough rest at room temperature for 30 minutes.

Preheat oven to 425°F (220°C). Line baking sheets with parchment paper.

Prepare a baking soda bath by dissolving baking soda in 6 cups of simmering water.
