- Bread flour4 cups
- Active dry yeast2 1/4 teaspoons
- Warm water1 1/2 cups
- Brown sugar1 tablespoon
- Baking soda2/3 cup
- Everything bagel seasoning1/4 cup
- Egg wash (1 egg beaten with 1 tbsp water)for brushing

In a large bowl, dissolve yeast and brown sugar in warm water. Let stand for 5-10 minutes until foamy.

Gradually add bread flour and mix until a shaggy dough forms.

Turn dough onto a lightly floured surface and knead for 8-10 minutes until smooth and elastic.

Place dough in a greased bowl, cover, and let rise in a warm place for 1 hour, or until doubled in size.

Preheat oven to 425°F (220°C). Line baking sheets with parchment paper.

Prepare baking soda bath: dissolve baking soda in 8 cups of simmering water.

Punch down dough and divide into 4 equal pieces. Roll each piece into a thick rope about 24 inches long. Shape into large pretzels.
