Ingredients
- Unsalted Butter225g
- Caster Sugar100g
- All-Purpose Flour225g
- Rice Flour75g
- Salt1/4 tsp
Steps

Cream the softened butter and caster sugar together until pale and fluffy.

Sift in the all-purpose flour, rice flour, and salt. Mix gently until just combined to form a soft dough.

Press the dough evenly into a 20cm (8-inch) round or square baking tin. Prick all over with a fork.

Score the top into wedges or squares before baking.

Bake in a preheated oven at 160°C (320°F) for 40-50 minutes, or until lightly golden and firm to the touch.
