Ingredients
- Rotisserie chicken, shredded2 cups
- Butter2 tbsp
- Onion, finely chopped1/2 cup
- Carrots, finely diced1/2 cup
- Chicken broth4 cups
- Milk or half-and-half1 cup
- Corn, frozen or canned1 cup
- Green peas, frozen1/2 cup
- Saltto taste
- Black pepperto taste
- Chives, chopped (for garnish)1 tbsp

In a pot, melt butter over medium heat. Add finely chopped onion and diced carrots. Sauté until softened, about 5 minutes.

Pour in chicken broth and bring to a simmer.

Add shredded rotisserie chicken, corn, and peas. Cook for 5-7 minutes until heated through.

Stir in milk or half-and-half. Heat gently until warmed through, do not boil. Season with salt and black pepper to taste.
