Ingredients
- Chicken breast or thigh, boneless, skinless500g

- Bell peppers (red, green, yellow)2
- Tomatoes, ripe300g
- Ginger, fresh1 inch piece
- Garlic cloves4
- Green chilies2-3
- Cumin seeds1 tsp
- Coriander powder1.5 tsp
- Turmeric powder0.5 tsp
- Garam masala1 tsp
- Red chili powder (Kashmiri for color)1 tsp
- Vegetable oil or Ghee2 tbsp
- Fresh cilantro, chopped2 tbsp

Cut chicken into bite-sized pieces. Chop onions and bell peppers into large cubes. Puree tomatoes, ginger, garlic, and green chilies.

Heat oil or ghee in a wok or large pan over medium-high heat. Add cumin seeds and let them splutter.

Add chopped onions and sauté until lightly golden.

Add the tomato-ginger-garlic-chili puree. Cook for 5-7 minutes until the oil starts to separate.

Stir in coriander powder, turmeric powder, red chili powder, and salt. Cook for 1 minute.

Add the chicken pieces and cook, stirring, until sealed on all sides.

Add chopped bell peppers and a splash of water if needed. Cover and simmer for 10-15 minutes, or until chicken is cooked through and tender.

Stir in garam masala and black pepper. Adjust salt if necessary.
