Ingredients
- Chicken breast, cooked and diced2 cups
- Butter4 tablespoons
- Mushrooms, sliced1 cup
- Green bell pepper, diced1/2 cup
- Pimientos, diced1/4 cup
- All-purpose flour1/4 cup
- Chicken broth1.5 cups
- Heavy cream1 cup
- Peas, frozen or fresh1/2 cup
- Saltto taste
- Black pepperto taste
- Sherry (optional)2 tablespoons
- Toasted bread or puff pastry shellsfor serving

Melt butter in a large skillet over medium heat. Add mushrooms and green bell pepper, sauté until softened, about 5-7 minutes.

Stir in the flour and cook for 1 minute, stirring constantly, to form a roux.

Gradually whisk in the chicken broth until smooth. Bring to a simmer, stirring until thickened.

Stir in the heavy cream, diced chicken, pimientos, and peas. If using, add sherry.

Cook, stirring gently, until heated through and sauce is creamy, about 5-10 minutes. Do not boil.
