Ingredients
- Beef sirloin or tenderloin1.5 lbs
- All-purpose flour1/4 cup
- Butter2 tbsp
- Olive oil1 tbsp
- Yellow onion1 medium
- Garlic2 cloves
- Beef broth2 cups
- Worcestershire sauce1 tbsp
- Fresh thyme1 tsp
- Saltto taste
- Black pepperto taste
- Optional: Mushrooms8 oz
- Optional: Mashed potatoes or egg noodles for servingfor serving

Cut beef into 1-inch cubes. Season generously with salt and pepper.

In a bowl, toss beef cubes with flour until lightly coated.

Heat butter and olive oil in a large skillet or Dutch oven over medium-high heat.

Sear beef cubes in batches until browned on all sides. Remove beef and set aside.

Add chopped onion to the skillet and sauté until softened, about 5 minutes.

Add minced garlic and cook for 1 minute until fragrant.

If using mushrooms, add them now and cook until browned.

Pour in beef broth and Worcestershire sauce, scraping up any browned bits from the bottom of the pan.

Return the beef to the skillet. Add fresh thyme.

Bring to a simmer, then reduce heat to low, cover, and cook for 45-60 minutes, or until beef is tender.

Season gravy with salt and pepper to taste.
