Ingredients
- Beef chuck roast or sirloin1.5 lbs
- All-purpose flour1/4 cup
- Butter3 tbsp
- Olive oil1 tbsp
- Cremini mushrooms10 oz
- Yellow onion1 medium
- Garlic3 cloves
- Beef broth1.5 cups
- Sour cream1/2 cup
- Dijon mustard1 tsp
- Fresh dill2 tbsp, chopped
- Saltto taste
- Black pepperto taste

Cut beef into 1-inch cubes. Season with salt and pepper.

Toss beef cubes with flour until lightly coated.

Heat 1 tbsp butter and 1 tbsp olive oil in a large skillet over medium-high heat.

Sear beef in batches until browned. Remove and set aside.

Add remaining 2 tbsp butter to the skillet. Add sliced mushrooms and cook until browned, about 5-7 minutes.

Add chopped onion and cook until softened, about 5 minutes.

Add minced garlic and cook for 1 minute until fragrant.

Pour in beef broth, scraping up browned bits. Bring to a simmer.

Return beef to the skillet. Reduce heat, cover, and simmer for 30-40 minutes, or until beef is tender.

In a small bowl, whisk together sour cream and Dijon mustard. Temper the sour cream mixture by whisking in a ladleful of hot broth from the skillet.

Stir the tempered sour cream mixture into the skillet. Cook gently for 2-3 minutes, do not boil.
