Churros Rellenos (Filled Churros)

75% authentic · Mexican-inspired

Classic churros filled with a sweet cream or fruit filling, offering a delightful surprise with every bite. A popular variation in some Latin American countries.

Ingredients

Servings4
  • Water1 cup
  • All-purpose flour1 cup
  • Salt1/4 teaspoon
  • Vegetable oil (for frying)4 cups
  • Dulce de leche (for filling)1 cup
  • Granulated sugar (for coating)1/2 cup
  • Cinnamon (for coating)1 teaspoon

Steps

  1. 1

Prepare the churro dough as per the Classic Spanish Churros recipe (Steps 1-3).

  2. 2

Heat vegetable oil in a deep pot to 375°F (190°C).

  3. 3

Pipe strips of dough into the hot oil. Fry until golden brown and crispy, about 2-3 minutes per side. Do NOT cut the churros to length yet.

  4. 4

Remove churros with a slotted spoon and drain on paper towels.

  5. 5

While still warm, carefully use a thin skewer or knife to create a hollow channel through the center of each churro, being careful not to break them.

  6. 6

Fill a piping bag with dulce de leche. Insert the tip into one end of each churro and gently fill the hollow center.

  7. 7

In a shallow dish, mix together sugar and cinnamon for coating.

  8. 8

Roll the filled churros in the cinnamon-sugar mixture.

  9. 9

    Serve immediately.
