Rinse tapioca pearls under cold water. In a medium saucepan, combine tapioca pearls and milk. Let stand for 30 minutes to soften the tapioca.

Cook the tapioca mixture over medium heat, stirring constantly, until the pearls are translucent and the mixture begins to thicken. This takes about 15-20 minutes.

In a separate bowl, whisk together sugar, eggs, and salt.

Temper the egg mixture by gradually whisking about 1 cup of the hot tapioca mixture into it. Then, pour the tempered egg mixture back into the saucepan with the remaining tapioca mixture.

Cook, stirring constantly, over low heat until the pudding thickens enough to coat the back of a spoon. Do not boil.

Remove from heat. Stir in vanilla extract and butter until butter is melted.
