Quick Idli Sambar

  • Tamarind paste2 tbsp
  • Mixed vegetables (carrots, peas, onion, tomato)1 cup, chopped

  • Turmeric powder1/4 tsp
  • Mustard seeds1/2 tsp
  • Curry leaves1/2 sprig
  • Oil1 tbsp
  • Saltto taste
  • Wateras needed
  • Coriander leaves (for garnish)for garnish

Steps

    Pressure cook toor dal until soft. Mash it lightly.

    In a pot, add chopped vegetables, turmeric powder, salt, and water. Cook until vegetables are tender.

    Add the mashed dal, tamarind paste, and sambar powder to the vegetables. Simmer for 10-15 minutes, adding water to adjust consistency.

    Prepare the tempering: Heat oil in a small pan. Add mustard seeds and curry leaves. Let them splutter.

    Pour the tempering over the sambar. Garnish with fresh coriander leaves.

    Steam the pre-made idli batter in idli molds for 10-12 minutes until done.
