Prepare the dough: Combine flour and salt. Cut in cold butter until crumbly. Mix in egg yolk and sour cream until a dough forms. Refrigerate for 30 minutes.

Preheat oven to 200°C (400°F). Line baking sheets with parchment paper.

Prepare the filling: In a bowl, mix crumbled feta cheese with chopped dill, parsley, salt, and black pepper.

Roll out the chilled dough to about 0.5 cm thickness on a floured surface.

Spread the herb-cheese mixture evenly over the dough. Fold the dough in half.
