Peel the potatoes and grate them using the coarse side of a grater.

Squeeze out as much moisture as possible from the grated potatoes.

In a separate pan, cook the diced bacon until crispy. Drain on paper towels and set aside.

In a bowl, combine the grated potatoes, cooled crispy bacon, grated Gruyère cheese, salt, and pepper.

Melt 2 tablespoons of butter in a large non-stick skillet over medium-high heat.

Add the potato mixture to the skillet, pressing it down to form an even layer.

Cook for 12-15 minutes until the bottom is golden brown and crispy.

Carefully flip the rösti using a plate or spatula. Add the remaining 1 tablespoon of butter to the skillet.

Slide the rösti back into the skillet and cook the other side for another 12-15 minutes until golden brown and the cheese is melted.
