- Vegetable broth300ml

- Parsley1/2 bunch
- Water500ml

Cut fresh cod fillets into bite-sized pieces.

In a pan, heat olive oil. Sauté finely chopped onion until translucent, then add minced garlic and cook for 30 seconds.

Add diced tomatoes and vegetable broth. Bring to a simmer.

Add the cod pieces to the simmering sauce. Cook for 8-10 minutes, or until the cod is cooked through and flakes easily. Stir in chopped parsley, salt, and pepper.

Prepare instant polenta according to package directions, using water and salt. Stir until creamy.

Serve the creamy polenta with the quick cod stew spooned over the top.
