Gently warm the honey in a saucepan over low heat. Do not boil.

Add the dried chili peppers (whole or slightly crushed), minced garlic, and apple cider vinegar to the warm honey.

Stir gently and let it infuse over very low heat for about 10-15 minutes, allowing the flavors to meld. The honey should become slightly more fluid.

Remove from heat and let it cool completely. The chili and garlic will continue to infuse.

Strain the honey to remove the solids, or leave them in for a more rustic presentation. Store in an airtight jar.
