- Smoked pork sausage300 g
- Beef chuck300 g
- Cabbage1 medium head

- Dried white beans, soaked150 g
- Beef or vegetable broth1.2 liters
- Bay leaf1
- Saltto taste

Soak dried beans overnight.

In a large pot, cook diced pancetta over medium heat until crispy. Remove pancetta with a slotted spoon, leaving the rendered fat in the pot. Set pancetta aside.

Add beef chuck to the pot and brown on all sides in the pancetta fat. Remove beef and set aside.

Slice the smoked sausage and add it to the pot. Cook for a few minutes until lightly browned. Remove sausage and set aside.

Chop cabbage, kale, leek, carrot, and mince garlic.

Add leeks and carrots to the pot and sauté for 5 minutes. Add cabbage and kale and cook until wilted.

Return the beef, sausage, and soaked beans to the pot. Add the broth and bay leaf. Bring to a boil.

Reduce heat, cover, and simmer for 1.5 hours, or until beef and beans are tender.

Stir in the reserved crispy pancetta just before serving. Season with salt and pepper to taste. Serve hot.
