- Beef broth1.5 liters
- Dry red wine100ml
- Tomato paste1 tbsp
- Bay leaf1
- Fresh parsleya handful
- Olive oil2 tbsp
- Saltto taste

Cut beef into bite-sized cubes. Season with salt and pepper.

Heat olive oil in a large pot or Dutch oven over medium-high heat. Brown the beef cubes on all sides.

Remove beef from the pot and set aside. Add chopped onion to the pot and sauté until softened, about 5 minutes.

Add minced garlic and cook for another minute until fragrant.

Stir in tomato paste and cook for 1-2 minutes.

Pour in red wine and scrape the bottom of the pot to deglaze. Let it simmer for 2-3 minutes.

Return the beef to the pot. Add beef broth, bay leaf, and enough water to cover the ingredients.

Bring to a boil, then reduce heat, cover, and simmer for at least 1.5 hours, or until beef is tender.

Peel and chop carrots and potatoes into bite-sized pieces. Add them to the soup.

Continue to simmer for another 20-30 minutes, or until vegetables are tender.

Remove bay leaf. Season with salt and pepper to taste. Stir in chopped fresh parsley.
