- Dry white wine75ml

- Olive oil2 tbsp
- Potatoes300g
- All-purpose flour100g
- Egg yolk1

Prepare the gnocchi: Boil and mash potatoes. Mix with flour, egg yolk, salt, and pepper to form a dough. Roll into ropes and cut into small pieces.

Cut beef into cubes. Season with salt and pepper. Heat olive oil in a pot, brown beef.

Remove beef. Sauté chopped onion, carrots, and celery until softened.

Add minced garlic and cook for 1 minute.

Deglaze with white wine. Return beef to the pot.

Add beef broth, bay leaf, and rosemary sprig. Bring to a boil, then simmer covered for 1 hour until beef is tender.

Add the prepared gnocchi to the simmering soup. Cook for 3-5 minutes until they float to the surface.

Remove bay leaf and rosemary sprig. Season soup with salt and pepper to taste.
